Cowboy Star Restaurant and Butcher Shop (located in Colorado Springs and San Diego) celebrated its one-year anniversary in Colorado this past Thursday, April 28, 2016, with a charitable patio party benefiting Care and Share Food Bank for Southern Colorado. All proceeds were donated to Care and Share to supply their Summer Mobile Food Pantry, which provides food to soup kitchens, pantries and emergency shelters all throughout Southern Colorado.
“Our passion is bringing the community together through food. Since we opened last April, we have felt the incredible support of this community and being able to support organizations like Care and Share in their efforts to ease child hunger was something we really wanted to be a part of.”
Cowboy Star’s anniversary event featured sample pours from local breweries such as, Red Leg, Bristol and Local Relic – all perfectly paired with Colorado-sourced pork. Patrons enjoyed wine specials, signature cocktails and experienced the official launch of Local Relic’s Peach Trappist Ale – with an exclusive feature of Cowboy Star’s logo on the label.
The Cowboy Star culinary team served up BBQ smoked meats on their patio, along with savory sauces from their onsite butcher shop, mac and cheese, spring mix salad, fresh bread rolls and grilled sausages.
Colorado was hand-selected to be the home of Cowboy Star’s second location due to the state’s charm and culinary appeal, an expansion of their first location in San Diego, California.
“We were looking for a location that had the best of both worlds. Colorado not only offers access to incredible local produce, farmers and vendors but has a strong sense of community that perfectly fits what Cowboy Star is all about,” said Co-Owner and Executive Chef, Victor Jimenez.

The farms and ranches providing these cuts adhere to 100% grass and corn fed, U.S.D.A. prime, 35-day dry-aged beef as well as free-range poultry and game.
